Purest Tequila - Holier Than Thou
Development of our first 100% Agave Tequila began in June 2022 with the aim of making it reflect the truest version of the spirit.
Broadly speaking there are two types of Tequila in the world: Mixto Tequila and 100% Agave Tequila. The former is so named as it sees different sources of sugar aside from the Agave cactus used during the fermentation process, indeed up to 49% of a Mixto Tequila can be from somehwere other than a cactus. This is not to say that Mixto Tequilas are of a worse quality than pure Agave products, indeed we will soon have our first Mixtos soon - so watch out for that…
Our philosophy about Tequila stems from Sofia and her family who raised her amongst Agaves. We want to find the most honest expression of the Agave cactus in our Tequila, avoiding all of the manipulation which happens for most industrial products. Furthermore we are going to go back to basics and try to innovate in the Tequila making process so as to explore ways to provide a higher depth of flavour. Additionally we have the more ambitious goal of rethinking the production processes so as to reduce the energy and water consumed during distillation, thus making the product much more ethical.
Tasting aim, yeast development
We will start this development by looking at each and every possible variable of the fermentation process: temperature, yeast - both natural and commercial, nutrient regimes and so on. Our aim here is to create an Agave wine, which on its own would be a lovely drink, but distilled would lead to a smoother, richer and all together better Tequila.
For the distillation we would be distilling in copper alembics which while popular in the production of most quality spirits are not always encountered at Tequila distilleries. Copper is a useful metal for reacting with certain chemicals thus eliminating them from the final distillate; which in non-scientific terms gives you a better tasting Tequila. We have also worked with our engineers to build a distillation setup where all water used as a coolant during the process is recycled as as to reduce waste. Our steam generators have been designed to burn Agave-derived biomass and hydrogen rather than relying solely on diesel oil as fuel again further reducing the carbon-footprint of the process. We’ve also worked with Spanish still experts to design a still which will capture the desired flavour compounds and leave behind as many of the flavours which we don’t want as possible.
We intend for this to be our flagship product, so expect big things from this project. A Tequila which is truly hand crafted from development all the way through to the individual batches. Designed to be the best Tequila there has ever been or will be.
